Works collaboratively with other Resort departments (Marketing, Entertainment, Security, Gaming, EVS, Convention Sales, etc. ) as necessary to ensure effective operation and promotion. Has an understanding of policies and applicable regulations governing our liquor license. Effectively monitors and communicates those standards and regulations across the property. Ensures that all compliance related standards are being met. Effectively oversees the Entertainment booking for Exit 33 and Motif. Ensures spending is within budget, and the entertainers meet the standards of the Resort. Effectively manages the Beverage and Nightlife operations across the resort, ensuring that employees are trained and developed in Beverage operations. Consistently monitors business flow to develop efficient training, break and shift schedules. Ensures appropriate training for cross utilization of Beverage across the property. Works collaboratively with Food and Beverage to ensure smooth operation and promotion of all Restaurant menus, and cocktail and beer service Created and executes seasonal cocktail menus, as well as Beer mix Reviews all expenses and invoices, and ensures services are being provided properly. This includes Pepsi, NuC0 (c02), coffee reps, and PCM music. Works with the Legal department, and HR on creating and executing policies related to Alcohol service. Works with the legal department to make sure all liquor licenses and GC licenses are up to date and visible. Ensures appropriate guest service levels for the Exit 33 complex are maintained and is dedicated to creating a memorable experience for all guests by ensuring exceptional service, showmanship and professionalism. Demonstrates an expert knowledge of and understands the implementation of a full service alcoholic beverage operation. Ensures that all applicable employees in the Beverage Department and Exit 33 have taken the applicable alcohol awareness training programs. Ensures the implementation and efficient execution of the Patron Safety Policy. Works with Security on implementing security plan and training security staff to maintain a safe environment for patrons and employees. Effectively oversees all operations inside and outside of club, ensuring safety of all guests. Demonstrates cutting edge knowledge of current music and entertainment elements necessary for each club in the Exit 33 complex and Motif. Develops and implements an effective marketing/promotion plan for each club. Effectively directs promotions staff on internal and external customer development and promotional strategies. Ensures that all employees within Beverage and the nightlife complex are properly trained in the performance of their job duties and establishes accountability for maintaining the highest service standards. Ensures appropriate training for cross utilization of Beverage staff across the property. Establishes and maintains effective departmental procedures and controls and ensures compliance among all employees. Ensures staffing levels and scheduling are effectively managed to match coverage to projected business volume. Ensures labor costs are managed appropriately and demonstrates scheduling practices that are fair to staff. Follows staff replacement procedures. Effectively develops and adheres to annual department budget. Prepares budgets, operating forecasts, variance reports and other required departmental reports. Ensures proper sanitation procedures are in place and are maintained at the highest standard. Ensures all equipment, furniture and fixtures are maintained cleaned, and operating within all health and safety standards. Takes responsibility for consistently meeting revenue and profitability goals. Measures performance and quality of services across the property related to Beverage service. Continuously looks at new and innovative ideas to improve efficiency and speed of service to guests; stays abreast of latest technology solutions and makes appropriate recommendations for implementation. Ensures all tip collection, distribution and recording procedures are accurately followed; ensuring integrity and internal controls. Ensures staff receives sales slip reports in a timely manner and trains all Beverage staff in the process of declaring tips.   …
